Serves 3
Ingredients:
for the Gremolata -
half a cup of finely chopped parsley (flat leaf or curly)
zest of 2 lemons
1 tsp crushed garlic
1/2 a tsp of himalayan salt
1 tsp of good extra virgin olive oil
4 small ripe tomatoes, diced
a small handful of kale, finely chopped
3/4 cup of green beans, cut into smallish pieces
1 small red onion, cut in half and sliced very finely
2 garlic cloves, sliced
torn basil leaves (to serve)
2 tsp of fish sauce
500g green king prawns, peeled and cut into thirds
1 1/2 tsp olive oil
3 cups of pasta, any type
himalayan salt
First make your gremolata. this is really simple. Mix the chopped parsley, lemon zest, salt and crushed garlic together. A good way to do this and really intensify the flavour is to chop it into each other. put all the ingredients on a chopping board and chop them up together. Place them in a bowl and add a tsp of good olive oil. Mix together and put aside.
Bring a saucepan of water to the boil, add a tsp of salt and add pasta. cook for 8-10 minutes or until al dente.
Heat up a wok over medium high heat and add the sliced garlic and red onion. cook until soft then add your green beans, tomato, fish sauce and kale. When beans are half cooked add prawns and season with salt. Cook for 2/3 minutes or until your prawns are cooked. Drain the pasta and add to the sauce. Sprinkle with basil leaves and serve immediately.
